Having lunch at my desk today while I work through Etsy orders and, I'm telling you, this is the soup that keeps me alive. It's so simple and it's probably what makes it so delicious. For years, the favorite in my family here and abroad, we've made this in every season. You can try it for yourself and see, here's the recipe. Share it all you want, please just credit The Apricity Diary with a link back.
Tomato Basil Bisque
1 15oz Can Hunt's Tomato Sauce, 3/4 Cup Milk, 1/4 Cup Heavy Cream, 3 Tbsp Butter, 1 Heaping Tbsp All Purpose Flour, 1 Tsp Dried Basil, 1 Tbsp Shredded Romano Cheese, 1/2 Tbsp Shredded Parmesean Cheese, Salt & Pepper to taste. A bit of hot sauce is optional.
Melt butter in a small pot over medium heat, add flour and whisk to make a roux. Slowly pour in sauce, stir. Slowly pour in cream and milk, stir. Add rest of ingredients and keep barely at a simmer till all the cheese is melted, about 15 minutes total. Serve with Oyster Crackers or fresh bread.
